Strawberry Jam Filled Vanilla Muffins

Delicious soft vanilla muffins filled with a bright, homemade strawberry jam make for a delicious snack or dessert!

I started this blog on August 1, 2010 and my very first recipe post was Strawberry Filled Cupcakes.  I had no idea what I was doing so the pictures were small and grainy, the post was basic, and I was scared I would fail.

Thirteen years later I’m still here and I’m updating that very first post.  Instead of a jam filled cupcake I made a basic jam filled muffin without any frosting on top.

I had a carton of strawberries that were starting to go bad and I knew I was never going to use them so I made a quick strawberry jam.  Then I needed to figure out what I was going to do with the jam.

We’ve been trying to eat a little healthier so instead of making strawberry filled cupcakes with frosting I decided to make a simple vanilla cupcake that was filled with strawberry jam.

Ingredients:

  • strawberries (very ripe ones work best)
  • granulated sugar
  • lemon juice (fresh is best but you can use bottled)
  • vanilla Greek yogurt (you can also use plain but I like the extra vanilla flavor)
  • vanilla extract
  • milk (whole milk is best)
  • butter (I like salted but you can use unsalted)
  • egg
  • all purpose flour
  • baking powder
  • salt

The muffins are easy to make.  They have more of a muffin consistency and taste like vanilla.  I like the extra vanilla from the vanilla yogurt as I think it pairs nicely with the strawberry jam.

The other nice thing about these muffins are that you don’t have to bake them then fill them.  You fill the muffin cups up half way with the muffin batter, put in a scoop of jam, then top it off with more batter before baking.

What is the difference between a muffin and a cupcake?

Muffins tend to have more flour while cupcakes have more sugar.   Cupcakes usually have a sweet frosting while muffins stay plain or have a light glaze on top.  Muffins are denser while cupcakes a light and fluffy.

How do you make strawberry jam?

Strawberry jam is made by combining strawberries and sugar in a pot along with some type of acid like lemon juice.  The mixture is boiled and then simmered until the natural pectin is released and the jam thickens.

Can I use store bought jam?

Of course you can but making your own jam is so easy and tastes so much better!

Can I make the jam in advance?

You can make the jam up to a week in advance and store in an air tight container in the refrigerator until you are ready to use it.

Can I top the muffins with a glaze or something?

You can make a quick powdered sugar and lemon juice glaze to drizzle over the top if you would like.  I ended up just putting a dusting of powdered sugar on top which looked pretty and added just a hint of sweetness.

Once the muffins come out of the oven let them cool completely.   You can just leave them as they are and enjoy or else you can decorate the tops of them.

I simply dusted the tops of the muffins with powdered sugar.  I don’t have a fancy utensil that does it for me so I put some on a fork and tap the sides of it to dust them.

More Muffin Recipes:

If you want something a little bit sweeter on top of your muffin you can use a glaze.  Powdered sugar, vanilla, and milk make for a sweet vanilla glaze.   You can also add lemon juice instead of the milk and vanilla to make a sweet and tart lemon glaze.

I really enjoyed these muffins.  They had a light vanilla flavor and were firm enough to hold up to the fresh strawberry jam in the middle of them.  I felt like they could be eaten as a snack, for dessert, or even for breakfast!

Strawberry Jam FIlled Vanilla Muffins

Yield: 12 muffins
Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour

A tasty vanilla muffin filled with homemade strawberry jam.

Ingredients

For the strawberry jam:

  • 8 oz. fresh strawberries, diced
  • 1/2 c. sugar
  • 1 Tablespoon lemon juice

For the muffins:

  • 1/2 c. Greek vanilla yogurt
  • 1 teaspoon vanilla extract
  • 1/4 c. milk
  • 6 Tablespoons butter, melted and cooled
  • 1 egg
  • 1 1/4 c. all purpose flour
  • 1/2 c. sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Put all the jam ingredients in a medium saucepan over medium high heat.
  2. Boil for 5 minutes, stirring constantly.
  3. Reduce heat to medium low and cook for 15 minutes or until the jam has thickened.
  4. Cool completely.
  5. Preheat the oven to 350 degrees.
  6. Line a muffin tin with 12 cupcake liners and set aside.
  7. In a medium bowl combine the Greek yogurt, vanilla extract, milk, and butter. Mix well until combined.
  8. In a large bowl combine the flour, sugar, baking powder, and salt. Mix well.
  9. Add the butter mixture to the flour mixture and mix until smooth.
  10. Fill each muffin cup halfway full with the muffin batter. Add a teaspoon of strawberry jam and then a tablespoon of muffin batter over top of the strawberry jam, covering it completely.
  11. Bake for 25 minutes.
  12. Remove from the oven and cool completely.

  1. Thanks for sharing this! I am doing cupcakes today for my duaghter’s birthday. I was debating on filling my cupcakes before or after….the before looks so much easier!
