Baked Pineapple Casserole

Baked Pineapple is a sweet side dish made of bread, eggs, and pineapple that goes great with a holiday ham. This recipe originally published January 2011.

Does your family have any traditional side dishes that they make for the holidays?  If I had to name one that makes me think of my mom it is Baked Pineapple Casserole.

Every year on Easter and Christmas my mom makes baked Pineapple.  Apparently it goes great with her holiday ham.  I don’t eat ham but that doesn’t stop me from gobbling up all the Baked Pineapple.

My mom only makes it at Christmas and Easter which may be one of the reasons why I love it so much.  It’s made with bread, pineapple, and eggs and baked into a yummy casserole.

When I was younger we used to just take the bread and tear it into pieces and throw it into the dish.  I see now that my mom did that to give us something to do.  Now whenever I make it on my own I cut the bread which cuts down on the prep time.

Ingredients:

  • white bread
  • crushed pineapple
  • butter
  • milk
  • sugar
  • eggs
  • cinnamon
  • nutmeg
  • salt

This dish is super easy to make and would be great for kids helping in the kitchen or for beginners.  While my mom always puts all the ingredients in a bowl and mixes them before spreading them in the pan I just make it all in my baking dish.  Why dirty another pan?

The most time consuming part of the dish is tearing or cutting up the bread.  After that it’s just a matter of dumping everything together and mixing.

Can I use a different type of bread?

I’m sure you can use any type of bread you want.  I simply use white bread because it soaks up all the flavors from the pineapple and spices but use what you like. I think a cinnamon bread would be really tasty in this dish.

Can I use cream or half and half?

If you have heavy cream or half and half instead of milk you can use it.  I prefer using milk but any of these would work in the dish.

Can I make this ahead of time?

You can make this up to 24 hours in advance.   We always make it and then cover with foil and refrigerate for 24 hours.  Then when it’s time to eat we heat the oven and cook according to the directions.

How do you reheat it?

I always just reheat a portion of it in the microwave. It’s already soft so the microwave really doesn’t change the texture of it.  Depending on the portion size you will heat it for 30-60 seconds.

The casserole consists of crushed pineapple, fresh bread, milk, eggs, and spices.  It bakes up into a bread casserole that has sweet bursts of pineapple with hints of cinnamon and nutmeg. 

This dish quickly became a favorite of my entire family and we look forward to eating it at the holidays.  My mom knows she has to make it on both Easter and Christmas and it’s always there right next to the ham.

Baked Pineapple Casserole

Yield: serves 12
Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour

A sweet side dish made of bread, eggs, and pineapple that goes great with a holiday ham.

Ingredients

  • 12 slices of fresh white bread, broken into 1 inch pieces
  • 1 can (20 oz) crushed pineapple with juice
  • ½ c. (1 stick) melted butter
  • ½ c. low fat milk
  • ¾ c. sugar
  • 3 eggs, beaten
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 375 degrees. Spray a 9 x 13 baking dish with cooking spray.
  2. In a large bowl beat the eggs, sugar, butter, and milk.  Stir in the pineapple and juice.  Add in the cinnamon and nutmeg.
  3. Put the bread pieces in the bowl and stir until just combined. 
    Spread into the prepared pan and sprinkle with cinnamon and sugar.
  4. Bake for 45 minutes.  Serve warm or cold.
