Easy Fruit Salad with Mojito Dressing

Berries and peaches are mixed together and tossed with a sweet and tart Mojito Lime Dressing making a tasty summer fruit salad.  Add rum to the dressing for adults or leave it out for the kids!

I am a sucker for good fruit and there is no better fruit than in the summer, at least where we live.   I could eat fruit at every meal and be happy.

I like to have it in a smoothie, I enjoy eating it with yogurt, and I like just eating a piece of fruit plain.  In the summer I enjoy mixing all of the fresh fruit I can find together in a big bowl and making a fresh, sweet dressing to go over top of it.

This weekend I got fresh peaches from the farmer’s market and then grabbed some berries from the market.  It’s one of my favorite summer pairings.  I figured I could toss them together with some type of dressing.

Ingredients:

  • peaches (make sure they are ripe)
  • blueberries
  • raspberries
  • honey (I like to get local when I can)
  • fresh lime juice
  • rum (this is optional, if you don’t use it you don’t need to add anything to the dressing)
  • mint leaves (I have these in my garden and you can probably find them in your neighborhood.

This is an easy dish to make.   To start take the pits out of the peaches and slice them into thin slices.  Then add in the blueberries and raspberries.

Next combine the lime juice and honey and whisk until the honey disappears into the lime.  Add in rum if you’d like and some chopped mint.

What is a mojito?

A mojito is a Cuban cocktail that consists of sugar, lime, mint, and rum.  So I took those flavors and made my mojito dressing.  I used honey instead of sugar because sugar won’t dissolve as well.

Can I use other fruits?

You can use other stone fruits (fruits with pits) or other berries.  I think plums or cherries would be great in this fruit salad as other stone fruits.  Blackberries and strawberries would work well as the other berries.

Can I make the fruit salad in advance?

You can make the fruit salad up to 12 hours in advance.   That is the sweet spot for the flavors melding together but the fruit still standing firm enough.  After 12 hours the fruit starts to break down and get soft.

How do I store this fruit salad?

The fruit salad is best stored in an air tight container in the refrigerator for up to 2 days.  If you keep the fruit and the dressing separate you can keep it for 3-4 days.

I whisked up the dressing and gave it a taste.  This dressing is killer.  The honey is made from bees at a local orchard and is sweet and delicious.  The lime juice added a tartness and the mint gave it a nice finish.

The dressing paired well with the berries and the peaches.   I let everything sit for a few hours so that the fruit soaked up the flavor of the mojito dressing.

Just a note that since the dressing is not heated make sure to eliminate the rum if serving the fruit salad to children.

Fruit Salad with Mojito Dressing

Ingredients

  • 4 peaches cut into 1 inch pieces
  • 1 pint blueberries
  • 1 pint raspberries
  • 3 Tablespoons honey
  • 1 Tablespoon lime juice
  • 1 Tablespoon rum optional
  • 5 fresh mint leaves minced

Instructions

  • In a large bowl combine the peaches, blueberries, and raspberries. Toss to combine.
  • In a small bowl mix together the honey, lime juice, rum (if using),
    and mint leaves.   Give it a quick taste and add more honey or juice as
    needed.
  • Pour the dressing over the fruit and refrigerate for at least an hour before serving.
  • Give it a stir to coat the fruit in the dressing before serving.
