Warm Roasted Feta and Red Pepper Dip: Secret Recipe Club

It’s time for another Secret Recipe Club Reveal!  I was so excited when I found that my blog for the month was Cheese Curd In Paradise.  This blog is written by Ashley, a wonderful food blogger who is part of a food blogging community with me!  She is just fabulous and has a great blog.  There were so many delicious recipes to choose from like her Grapefruit Lime Basil Punch, Beergarita Chicken Tacos, and this Cannoli Cheesecake which I’ve been drooling over.

While all of those recipes looked amazing, I had actually pinned a recipe from her blog several days before I found out I had her blog.  This warm feta dip caught my attention right away.  It was super simple to make and just sounded good.  I had a few of my besties over for happy hour this week and made this dip.  They raved about it and promptly asked for the recipe!  The feta melts nicely with the cream cheese and the garlic and lemon add in some flavor.  The roasted red peppers add both color and flavor.  I served it with tortilla chips but it would be good with crackers or crostini as well.

Warm roasted Feta and Red Pepper Dip (adapted Cheese Curd in Paradise)
8 oz. cream cheese
6 oz. feta cheese
1/2 c. roasted red peppers, chopped
1 t. parsley
2 garlic cloves, minced
1 t. lemon juice

1.  In a medium bowl combine all ingredients and mix well.

2.  Preheat the oven to 400 degrees.  Spread the dip into an oven safe dish.  Bake for 15 minutes and serve hot with tortilla chips or crackers.
