I don’t know about you but there’s nothing like a gooey, homemade brownie at the holidays.  While there are some good box mix brownies out there they just simply don’t compare to a homemade brownie.

I was beginning to work on my desserts for Easter and I somehow wanted to work a brownie into the mix.  Unfortunately brownies aren’t glaringly a spring dessert.  I needed to find out how to turn it into one.

After doing a little research I came across these Malted Milk Brownies that just sounded amazing.   Plus they had chocolate eggs in them and fun sprinkles on top which just screamed Easter to me.

Ingredients:

  • semi-sweet chocolate
  • salted butter
  • granulated sugar (I used Dixie Crystals)
  • 4 eggs
  • vanilla bean paste (I used Taylor & Colledge)
  • flour
  • malted milk powder
  • salt
  • chocolate eggs
  • powdered sugar
  • milk
  • sprinkles (I used sprinkles from Sweets & Treats)

To Make the brownies: Melt the chocolate in a saucepan.  Add in the butter and heat until melted.  Remove from heat and stir in the sugar.  Add the eggs one at a time and beat well.  Mix in the vanilla.  In another bowl combine the flour, malted milk powder, and salt.   Add the flour mixture to the chocolate mixture and mix until combined.   Fold in the chocolate eggs.  Pour into a pan and bake for 30 minutes.

I like to bake these in a 9 x 13 Anolon cake pan with silicone grip sides.   The silicone grips make it so easy to take them out of the oven.

To Make the Frosting:   Cream the butter with a mixer.   Add in the powdered sugar and mix until combined.  Add in the malted milk powder, milk, and vanilla bean paste.  Melt the chocolate in the microwave.  Add the chocolate to the mixture and beat for 2-3 minutes or until fluffy.

Making these brownies they looked amazing.  They have melted chocolate in them instead of cocoa powder which makes for a richer brownie.  They are made with salted butter which brings out the chocolate flavor and Dixie Crystals granulated sugar.

I also used Taylor & Colledge vanilla bean paste instead of vanilla extract because I find it packs a bolder flavor.  If using vanilla extract I’d use double the amount in these brownies.

There are also chocolate eggs in the brownies which adds to the burst of chocolate flavor.  I chopped mine into 3 pieces because I thought they were a little big to just put into the brownies.  You can cut them in half or into even more pieces.

What is malted milk powder?

Malted milk powder is a light-yellow powder that has a light nutty flavor and a natural sweetness.   The malt comes from a grain, usually barely, that has sprouted and then is dried.  It is most commonly made with evaporated milk, barely, and wheat flour.

What does malted milk powder taste like?

If you taste malted milk powder on it’s own it doesn’t taste very good.  However, once it’s mixed with something it gives that food or beverage a creamy, milky, and sweet flavor.  It really boosts the flavor of ice cream, sodas, milkshakes, and baked goods.  It can be purchased in chocolate or vanilla flavored.

Do I have to use chocolate eggs?

No you don’t but they are perfect for this Easter dessert.  You can use M&M’s, mini chocolate candies, or even malted milk balls if you’d like.  Make the dessert your own and if you making it for something other than Easter change up the chocolate candies for a color that goes with your theme.

Can I use canned frosting instead of making my own?

No.  Just no.  I absolutely hate canned frosting because of the after taste.  While technically you can use canned frosting please don’t do it with this recipe as it will ruin these brownies.  If you have a chocolate frosting recipe you just love feel free to make that instead of the frosting recipe I’m sharing.

How long do these brownies keep?

You can keep these in an air tight container at room temperature for 5 days.  They will last around 10 days in an air tight container in the refrigerator.

After the brownies cooled I worked on the frosting.   It also uses melted chocolate but it’s whipped with butter and powdered sugar so it gets really creamy and fluffy but with a burst of chocolate in it.

Once the brownies are frosted you can decorate them any way you want.  I cut the chocolate eggs in half and pressed them into the frosting.  Then I used Sweets & Treats 24 Carrot Sprinkle Mix which is just adorable.  It has rose gold jimmies, green chocolate balls, white star quins, and carrot candies in it.

More Brownie Recipes:

I cut the brownies into small squares and served them.  They are so decadent that a small square is the perfect size for most people.   If anyone wants more they can grab another square!

I took these brownies to work and they were gobbled up by the staff.  I have to admit that even I grabbed another one once I got to work.  The rich, chocolate brownies studded with chocolate candies topped off with fluffy chocolate frosting, more candies, and sprinkles was just an amazing Easter treat.
