This past weekend I was lucky enough to be chosen to host a HouseParty.  This wasn’t just any party, it was one to help feed the hungry.   This week I invited a few friends to my house to help participate in Outnumber Hunger.  Outnumber Hunger has partnered with General Mills to help feed local families.   All you have to do is buy participating General Mills products and enter the code to feed 5 families in your area.   You enter your zip code after entering the codes and Outnumber Hunger will send 5 meals to the closer food bank.

Outnumber Hunger is also partnering with Feeding America and BMLG.  Feeding America is the nation’s largest domestic hunger relief charity.   BMLG was founded in 2005 by Scott Borchetta.   He has gathered a star-studded roster of country music artists, including Rascal Flatts and Florida-Georgia Line, to work together to help fight hunger in communities across the United States.

I am very passionate about this project as I often see the effects of children that are hungry.   We are lucky in our community to participate in a backpack program where local churches fill backpacks with food every weekend for hungry children to take home with them.  Every Friday the smiles that I see on the children’s faces when they pick up their backpack makes me realize just how much they need that food.   This past summer the program went to central locations in the community to pass out brown bags lunches during the week.

It’s programs like this that help us combat hunger in our own nation.  Every General Mills code can help 5 local families so look for participating products at your local grocery store.  Looking to see which brands have codes on them?   You can see the list HERE.

Strawberry Yogurt Cake with whipped frosting

For the party I made a delicious Strawberry Yogurt Torte which uses two of the products that have codes on them.   So I was able to feed my friends a moist strawberry yogurt cake that was filled with whipped frosting and strawberries as well as feed 10 people in my community.   It made me feel good to know that I was helping others while making something for my friends.Outnumber Hunger #HouseParty

The cake is super easy to make.  It uses a Betty Crocker cake mix and Yoplait strawberry yogurt.  Then I whipped up a quick and easy frosting and added in some strawberries between the layers.  It makes a light and airy cake that is perfect for summer.

Strawberry Yogurt Torte

A semi-homemade strawberry vanilla cake topped with a whipped cream frosting and filled with fresh strawberries.

Ingredients

For the Cake:

  • 1 box Betty Crocker SuperMoist white cake mix
  • 3/4 c. water
  • 1/4 c. vegetable oil
  • 2 eggs
  • 1 container 6 oz Yoplait strawberry yogurt

For the Frosting and Toppings:

  • 1 container 8 oz Cool Whip
  • 1 package 3.5 oz instant vanilla pudding
  • 1 c. milk
  • 20 strawberries sliced

Instructions

  • Preheat the oven to 350 degrees. Spray 2 9" pans with cooking spray.
  • In a large bowl beat the cake mix, water, oil, eggs, and yogurt for 1 minute or until mixed completely. Divide the mixture between the two pans.
  • Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and cool for 10 minutes.
  • Run a butter knife around the pan and remove. Cool complete on a wire rack.
  • To make the frosting combine the vanilla pudding mix and milk in a bowl. Beat until well combined. Fold in the Cool Whip. Refrigerate until ready to use.
  • Place 1 cake layer on a cake round. Spread top with 1/2 cup of frosting. Arrange half of the slice strawberries on top of the frosting. Top with remaining cake layer. Use remaining frosting to frost the sides and top of cake.
  • Decorate the top with remaining strawberries. Refrigerate the cake for at least 2 hours or until chilled.
  • Cut into 12 large slices and serve.
