Roasted Pork Tenderloin with Potatoes and Vegetables

School is back in session and that means I’m looking for more quick and easy weeknight meals.  I like making things that are ready in 30 minutes and use only 1 or 2 pans so I don’t have a ton of dishes.  So when I headed to Food Lion this weekend and saw that Smithfield Marinated Pork was on sale, I picked a few up!   During the month of September all of the marinated pork products at Food Lion are between $4.99-$9.99.  I don’t know about you but anything under $10 is great in my book!

Smithfield Marinated Pork products are perfect for a delicious meal that’s east to make but sure to be enjoyed by all.   The roasts, tenderloins, and filets are great on the grill or in the oven and are ready to enjoy in 20-30 minutes.  The are a great solution for busy families and quick weeknight meals.  Plus Smithfield has lowered the sodium in all of their marinated pork products an average of 25.5 percent, making them healthier than ever.

So when I got home I raided the refrigerator looking for vegetables to go with my pork.  I had carrots, onions, celery, and onions which I thought would go perfectly with the Peppercorn & Garlic Tenderloin.  I precooked the potatoes in the microwave so they would be cooked in the time it took for the pork to be done.   Then I chopped all of the vegetables and threw them in a baking dish.   I butterflied the pork tenderloin and set it in the middle of the vegetables.  I poured on some chicken broth for added flavor and popped it in the oven

While it was cooking I decided that a quick gravy would be the perfect accompaniment to the pork.   So right before I took the pork out of the oven I made a quick roux of flour and butter.   I added the pan drippings to the roux, whisked it good, and added a little water.  Simple and tasty gravy which went perfectly with the pork.

The meal turned out fabulous and only ended up using 2 pans.   The pork and vegetables only took about 5 minutes to prep and cooked for 30 minutes in the oven so I had plenty of time to get other things done around the house.   I love making easy meals that do all the work themselves.

Roasted Pork Tenderloin with Potatoes and Vegetables

Yield: serves 4-6
Prep Time: 30 minutes
Cook Time: 35 minutes
Total Time: 1 hour 5 minutes

Ingredients

  • For the pork:
  • 1 Pork Tenderloin (about 2 pounds)
  • 1 lb. red skinned potatoes
  • 1 onion, thinly sliced
  • 1 c. baby carrots, cut in half lengthwise
  • 1 c. celery, chopped
  • 2 c. chicken broth
  • 4 garlic cloves, minced
  • 1 sprig of thyme
  • 1 teaspoon black pepper
  • 1 teaspoon salt

For the gravy:

  • 2 Tablespoons butter
  • 2 Tablespoons flour
  • Pan drippings
  • 1 teaspoon poultry seasoning (optional)
  • 1/2 c. water

Instructions

  1. Preheat the oven to 425 degrees.
  2. Poke holes in the potatoes and place them in a microwave safe bowl. Heat on high for 3 minutes. Remove and allow to cool.
  3. Thinly slice the onions, cut the carrots in half, and chop the celery. Place the vegetable sin a 9 x 13 baking dish.
  4. Carefully cut the potatoes into 1 inch chunks and add them to the baking dish.
  5. Butterfly the pork tenderloin by cutting it down the middle lengthwise. Place it in the center of the baking dish, on top of the vegetables.
  6. Pour the chicken broth over top of the pork and vegetables. Stir in the garlic cloves. Add the sprig of thyme and sprinkle with salt and pepper.
  7. Cover with foil and cook for 30 minutes, stirring once about halfway through the cooking time.
  8. Just before removing the pork from the oven melt the butter in a small saucepan. Whisk in the flour and cook for 2 minutes. Gently pour the pan drippings in the roux, whisking to incorporate. Stir in the poultry seasoning. Add water to get desired consistency.
  9. Remove the pork from the baking dish and slice on a cutting board. Serve slices of pork along side spoonfuls of the roasted vegetables and top with the gravy.
